Ingredients
1 1/2 cups (375ml0 water
1/4 cup(55g) sugar
2 small(600g) mangoes
2 tablespoons of lemon juice
2 teaspoons chopped glace ginger
2 egg whites
Method
Combine water and sugar in medium pan, stir over heat,without boiling, until sugar is dissolved. Boil uncovered, without stirring,about 5 minutes or until thickened slightly,cool.Refrigerate syrup until cold.
Process mango flesh,juice,ginger and syrup until smooth. Pour mixture into lamington pan,cover; freeze until almost set.Beat sorbet with egg whites in a large bowl with electric mixer,or process,until smooth.
Pour into loaf pan, cover;freeze until smooth.
